The Association of European Coeliac Societies (AOECS) is an independent, non-profit organization, representing 35 coeliac associations across Europe with its legal seat in Brussels, Belgium. AOECS reviews coeliac disease related problems of international importance, coordinates international activities and seeks to improve the exchange of information within its Member societies. In its efforts to ensure availability and labeling of safe gluten-free food, AOECS has introduced a Europe-wide licensing system for the use of the trademark-protected Crossed Grain symbol. To ensure that products meet the criteria for gluten-free, i.e. they contain a maximum of 20 parts per million gluten content or less, an AOECS standard for the production of gluten-free foods was created.
